Ingredients
- 1 Tbsp olive oil (F)
- 240g chicken breast- cubed (P)
- 2 carrots- chopped (C)
- 2 cups of celery- diced (C)
- 1 large brown onion - diced (C)
- 1 cup pumpkin - chopped (C)
- 1 tsp sweet paprika (Free)
- 1 tsp ground turmeric (Free)
- 1 tsp ground cumin (Free)
- 2L chicken bone broth or stock (Free)
- Handful fresh parsley (Free)
- 2 cups baby spinach - chopped (C)
- Sea salt and black pepper to season (Free)
Directions
- Place the oil into a large pot and add onion, chicken, sautéed until cooked and then remove from the pot and place in a separate bowl
- To the same pot used for chicken add carrots, celery and pumpkin, Once soft add spices and salt and pepper and add stock
- Bring to a simmer and cook on low for 2 hours
- Using a stick blender, blend the soup until smooth and then return chicken/onion mix
- Stir through spinach and season with parsley and black pepper
- Serve and enjoy!
