Spiced Vegetable Puree & Chicken Soup

Ingredients

  • 1 Tbsp olive oil (F)
  • 240g chicken breast- cubed (P)
  • 2 carrots- chopped (C)
  • 2 cups of celery- diced (C)
  • 1 large brown onion - diced (C)
  • 1 cup pumpkin - chopped (C)
  • 1 tsp sweet paprika (Free)
  • 1 tsp ground turmeric (Free)
  • 1 tsp ground cumin (Free)
  • 2L chicken bone broth or stock (Free)
  • Handful fresh parsley (Free)
  • 2 cups baby spinach - chopped (C)
  • Sea salt and black pepper to season (Free)

Directions

  • Place the oil into a large pot and add onion, chicken, sautéed until cooked and then remove from the pot and place in a separate bowl
  • To the same pot used for chicken add carrots, celery and pumpkin, Once soft add spices and salt and pepper and add stock
  • Bring to a simmer and cook on low for 2 hours
  • Using a stick blender, blend the soup until smooth and then return chicken/onion mix
  • Stir through spinach and season with parsley and black pepper
  • Serve and enjoy!
